Just wondering what kits are available and in what scales?
Here's a starter list and I would appreciate any additions, comments or corrections.

Have defined them as being single or twin seater.
Included kit numbers.
Suspect that Italeri and Revell shared moulds.
Don't know of any resin or vacform kits yet, these here are injection moulds.

1/48
Italeri no.862. EF-2000 Typhoon, twin.
Italeri 2610. EF-2000 Typhoon, single.
Revell 04551. Eurofighter Typhoon, single.

1/72
Airfix AX04036. Eurofighter Typhoon, single.
AMT/ERTL 8811. E.F.A. European Fighter Aircraft, single.
ESCI 9093. E.F.A. Eurofighter, single.
Italeri no.099. EF-2000 Eurofighter, twin.
Italeri no.042. EF-2000 Eurofighter, single.
Pegasus, limited run. BAe EAP, pre-Eurofighter demonstrator.
Revell 04334. Eurofighter 2000, single.
Revell 04338. Eurofighter Typhoon, twin. Also in diorama set?
Revell 4356. Eurofighter JF 90/EFA, single.
Tamiya 60731. EF-2000 Eurofighter, single. Rebox of Italeri 042.

1/100
Revell 06612, snap together. Eurofighter Typhoon, single.

1/144
Revell 4074. Eurofighter JF 90, single.

There was a 1/32 Revell too. Out of production now...

in 1/72, the Revell 04338 - I recently found this kit. The box art shows AMRAAM and an IR missile with tail fins only (ASRAAM)? Didn't buy the kit, so IDK if the box art is accurate (the new Revell twoseater was supposed to have Meteors, wasn't it?)

in 1/144, the 4074 kit is now being sold with "Eurofighter Typhoon" on the box. The box art is the same as the JF90 version, though.
4074 has EFA decals (with the 'quattro stagioni' roundels where each segment is a different country).  Weapons are 6 Sparrow and 2 Sidewinder.

Cheers for the list Nick, but finding them is a different kettle of fish.

Hobbes, 04338 is the new kit! Here. The boxart shows Amraams, Sidewinders and gasbags, and the Meteors are in the kit (I got two of'em).

Also, there's a new-mold 1/48th one coming from Revell, in the late summer IIRC. From memory (test-shot pic I saw on ARC), it comes with Amraam, Asraam, IRIS-T, Meteor, Storm Shadow, a few other munitions (Taurus?) and a German recce pod.

Quick follow-up on this topic.

Revell make a tiny 1/300? click together Eurofighter in German colours. Some of you probably saw me flying it around at Perth!

It is clear that Italeri and Revell did share the tooling for both the early single seat and the twin seat kits.

The ESCI kit is single seat and appears majorly different to the Revell kit in size.

I am still looking for the 1/72 Airfix, AMT and new Revell kits but keeping an eye on Ebay.

AMT/ERTL kit is the same as the ESCI kit (In fact I think mine is ESCI/ERTL).

Airfix kit was out last year or year before, and new Revell is current so shouldn't be hard to find.

The Italeri ones are the only 1/72 ones I haven't got.

I have the Esci/Ertl kit.  I borrowed the wings a few months ago to mock-up the Skyhawk mod for K5054NZ (did I spell that right?).  The kit looks okay, but the stores are interesting: 2 not-quite Sidewinders, 6 not-quite Sparrow/AMRAAMs and an assortment of bombs and gasbags.  Most interesting to me were the twin stores carriers, sort of like and MER with only two stations.

I've got the airfix one. I got it at Telford a couple of years ago when a teader was flogging them for a fiver.  I'm still trying (in vain) to get some Italeri single holers, seeing as Revell won't be getting there one out until when ever.
